Kamakura Local Salad

I love colorful salad. Color really makes a difference in your appetite. Interestingly the other day, I saw on a TV program that introduced several weight loss techniques. One of the ideas introduced was bowls (rice bowls to be exact) and utensils that came in odd colors that goes against stimulating one’s appetite, a color such as plasticky blue. Personally, I don’t know how to think about these objects because food should be consumed happily and satisfactorily, but that is simply my own opinion.

This salad is from Kamakura, a place just outside of Tokyo and a place popular to tourists because of its close proximity to the city and because there is a huge Buddha. They produce good vegetables there as well, and this salad uses all Kamakura-local vegetables. Some vegetables here are pumpkin, potato, red radish, tomato, sunny lettuce, and the crystalized aloe-like green plant called ice plant. Little bubbles pop in your mouth as you eat this vegetable! Almost tasteless but fun to eat.
